Italian Chicken

I think this is one of our favorite recipes. There is usually at leastone of us making it every week. Maybe because it is so easy to make.


Italian Chicken
  • About 3 chicken breasts cut into pieces
  • 1 Packet of Good Seasons Italiain Dressing and Recipe Mix
  • 1 8 oz Cream Cheese Softened
  • 1 Can Cream of Chicken Soup


Just put all the ingredients in the slow cooker and stir. Turn to low and cook it until the chicken is done. approx 5 hours. (there are different ways to make this, a couple of us add butter, some mix ingredents together before putting it in the crockpot)

Sloppy Joes

If you get sick of having Mamwich, this is a yummy and quick recipe for sloppy joes. This recipe comes from my Aunt Delea at one of my cousins mission farewells.
I am not sure how to make a picture of sloppy joes look good :)



GUMBO SLOPPY JOES
  • 1 lbs Ground Beef
  • 1 Can Light Chicken Gumbo Soup(I remove the okra from my soup)
  • 1/2 Cup Ketchup
  • 1 1/2 Tbsp Mustard

Brown Hamburger and drain. Add all ingredients in pan and bring to a boil. Lower heat and simmer to thicken the mixture approx 7 mins.

Lettuce Wraps

My friend Molly thats in my ward gave my Mother in law this recipe and we tried it last night they were way yummy. If you have ever tried them at P.F. Changs they tasted just the same!!

Lettuce wraps
Filling:

2 Tbs oil
2 chicken breast cooked we did like 7 tenderloins
1 8 oz can water chestnuts
3 Tbs chopped onion 1 cup chopped mushrooms we didn't put these in my mother in law added some to hers
1 tsp minced garlic

Stir Fy sauce

4 Tbs soy sauce
1 tsp rice vinegar
4 Tbs brown sugar

*The orginal recipe says tp pan fry your Chicken in oil, but i have baked it, steamed it, and boiled it depending on what is more convenient. It tastes good anyway you cook it.

Chop all veggies and cooked chicken into pea size. A food chopper works well for this. Prepare the stir fry sauce by mixing all ingedients toghether in small bowl. Set aside. Heat oil to med-high heat in a large frying pan. Saute' chicken, garlic, onions, mushrooms, and chestnuts for 4-5 minutes. Add the stir fry sauce and saute' 2-3 minutes more until completely warmed.Serve mixture in lettuce cups, with dipping sauce drizzled over it.

Dipping Sauce:

1/4 cup sugar
1/2 cup water
2 Tbs soy sauce
2 Tbs ketchup
2 Tbs rice vinegar
1 Tbs lemon juice

Mix sugar and water in small bowl, Add soy sauce, vinegar, ketchup and lemon juice, and mix well. Refridgerate until ready to serve.

Peanut Butter Cornflake Treats


1 ½ Cups of Peanut Butter
1 ½ Cups Corn Syrup
1 ½ Cups Sugar
About 9 cups of Cornflakes Cereal

Slowly bring to boil Corn Syrup and Sugar stirring constantly, let boil for about five minutes. Remove from heat and stir in Peanut Butter until the mixture is smooth. Pour mixture over Cornflakes and stir until coated. Put mixture onto a greased cookie sheet.

1 family size pack of hamburger
* roll into balls and line in a glass pan

1 jar of Chili Sauce
1 small jar of Grape Jelly
*Mix together in a bowl

Dump mixture of your raw meatballs

Put in oven on 375 for 45 minutes

We serve ours over Rice

Rasberry Puff Jello Salad

2 boxes Rasberry Jello
2 boxes Cook and Serve Tapioca
2 boxes Cook and Serve Vanilla pudding

* Dump all boxes in a pan
*Add 6 cups of water
*Stir constantly until boiling
* Pour in bowl and let set up in fridge
